BACKGROUND Chinese rice wine (CRW) is a kind of traditional fermentation wine in China. Aged CRW is more popular among consumers owing to its harmonious and pleasant flavor. The volatile profile of CRW has been extensively studied using gas chromatography/mass spectrometry (GC/MS). However, flavor components in CRW are far richer than those detected by GC/MS. To obtain more information about the volatile profile of fresh (5-year) and aged (10-year) CRW, a method based on comprehensive two-dimensional gas chromatography coupled to quadrupole mass spectrometry (GCxGC/qMS) was developed. The major volatile compounds contributing to the characteristic aroma of fresh and aged CRW were identified by surrogate odor activity value (OAV). RESULTS Ninety-eight volatile compounds were detected in the 5-year CRW samples and 107 in the 10-year samples by GCxGC/qMS. The numbers of compounds detected by GCxGC/qMS for the 5-year and 10-year samples were 71.4 and 65.4% higher than those detected by GC/MS. The aged wine had a more complex volatile profile than the fresh wine, with an increase in esters and aldehydes and a decrease in alcohols and organic acids. There were 22 volatile compounds with surrogate OAV > 1. Nine were the potent key aroma compounds in CRW: ethyl isovalerate (OAV 500-33 500), ethyl butyrate (OAV 84-334), ethyl isobutyrate (OAV 49-170), 2-nonenal (OAV 20-100), ethyl heptanoate (OAV 1-74), ethyl hexanoate (OAV 60-77), phenylethyl alcohol (OAV 2-18), benzaldehyde (OAV 28-30) and hexanal (OAV 4-11). CONCLUSION GCxGC/qMS showed better separation than GC/MS. The presented GCxGC/qMS method was suitable for characterization of the volatile profile of CRW. (c) 2019 Society of Chemical Industry

Aim: To study a new series of [1,2,3] triazolo[1,5-alpha] pyridine derivatives as trypanocidal agents because current antichagasic pharmacologic therapy is only partially effective. Materials & methods: The effect of the series upon Trypanosoma cruzi epimastigotes and murine macrophages viability, cell cycle, cell death and on the metabolites of the sterol biosynthesis pathway was measured; also, docking in 14 alpha-demethylase was analyzed. Results: Compound 16 inhibits 14 alpha-demethylase producing an imbalance in the cholesterol/ergosterol synthesis pathway, as suggested by a metabolic control and theoretical docking analysis. Consequently, it prevented cell proliferation, stopping the cellular cycle at the G2/M phase, inducing cell death. Conclusion: Although the exact cell death mechanism remained elusive, this series can be used for the further rational design of novel antiparasitic molecules.

Fermented soy sauce is used worldwide to enhance the flavour of many dishes. Many types of soy sauce are on the market, and their differences are mostly related to the country of origin, the production process applied and the ratio of ingredients used. Consequently, several aromas, tastes, colours, and textures are obtained. Nowadays, soy sauce can also be produced without microorganisms making the process shorter and cheaper. However, flavour may be lost. We have carried out a comprehensive metabolomics analysis of volatile compounds using stir bar sorptive extraction (SBSE)-GC-MS to relate differences in volatile content to production history and origin. The results revealed major differences between fermented and non-fermented soy sauces, and a list of volatile compounds is reported as being characteristic of each type. This study was able to relate volatiles to the production process using SBSE-GC-MS and to aroma characteristics using GC-O-MS.

We report a mild palladium-catalyzed selective dehydrogenation of 4-alkylpyridines that exploits their soft enolization to alkylidene dihydropyridines using allyl chloroformate under metal-free conditions. Treatment of these intermediates with a palladium catalyst liberates an alkylpyridylic anion and an allylpalladium(II) intermediate, which combine and undergo beta-hydride elimination to install a double bond. Importantly, the formation of gas byproducts makes the process very practical. Furthermore, the reaction tolerates a broad range of functional groups, including many that can be dehydrogenated using similar palladium-catalyzed reactions, and is selective for 4-alkylpyridines even in substrates bearing multiple pyridylic positions.

A new series of transition-metal complexes of Schiff base ligand containing the amino mercapto triazole moiety (HL) was prepared. The Schiff base and its metal complexes were elucidated by different spectroscopic techniques (infrared [IR], H-1 nuclear magnetic resonance, UV-Visible, mass, and electron spin resonance [ESR]), and magnetic moment and thermal studies. Quantum chemical calculations have been carried out to study the structure of the ligand and some of its complexes. The IR spectra showed that the ligand is chelated with the metal ion in a neutral, tridentate, and bidentate manner using NOS and NO donors in complexes 1-6, 10-12, and 7 and 8, respectively, whereas it behaves in a monobasic tridentate fashion using NOS donor sites in copper(II) nitrate complex (9). The magnetic moment and electronic spectra data revealed octahedral and square pyramidal geometries for complexes 2, 11, 12, and 5-8 and 10, respectively. However, the other complexes were found to have tetrahedral (4), trigonal bipyramidal (1 and 3), and square planar (9) structures. Thermal studies revealed that the chelates with different crystallized solvents undergo different types of interactions and the decomposition pathway ended with the formation of metal oxygen (MO) and metal sulfur (MS) as final products. The ESR spectrum of copper(II) complex 10 is axial in nature with hyperfine splitting with B-2(1g) as a ground state. By contrast, complexes 7 and 8 undergo distortion around the Cu(II) center, affording rhombic ESR spectra. The HL ligand and some of its complexes were screened against two bacterial species. Data showed that complex 12 demonstrated a better antibacterial activity than HL ligand and other chelates.

In this study, the chemical and sensory profiles of 42 different nonalcoholic beer (NAB) brands/styles already on the global market and produced through several different brewing techniques were evaluated. A trained panel (i.e., 11 panelists) performed standard-driven descriptive and check-all-that-apply analyses in triplicate to sensorially characterize the aroma and taste/mouthfeel profiles of 42 commercial NABs, a commercial soda, and a commercial seltzer water (n = 44). These beers were also chemically deconstructed using several different analytical techniques targeting volatile and nonvolatile compounds. Consumer analysis (n = 129) was then performed to evaluate the Northern Californian consumer hedonic liking of a selection (n = 12) of these NAB brands. These results provide direction to brewers and/or beverage producers on which techniques they should explore to develop desirable NAB offerings and suggest chemical targets that are indicators of specific flavor qualities and/or preference for American consumers.

The combined influence of structural factors (Y, Z substituents) on the rate of catalyzed by Z-substituted pyridines reactions of phenyloxirane with Y-substituted N-aroylbenzenesulfonamides in acetonitrile at 293 K was studied. Three novel ruthenium nitrosyl complexes [Ru(NO)Cl-3(InicMe)(2)] (1b), [RuNOCl3(NicEt)(2)] (1c) and [RuNOCl3(NicMe)(2)] (1d) (InicMe = methyl isonicotinate, NicEt = ethyl nicotinate, NicMe = methyl nicotinate)were prepared and crystal structure of the complexes were determined by single crystal XRD analysis. In all complexes, the organic ligands are coordinated by a pyridine nitrogen atom and located in trans-position each to other and in cis-position to NO group. In the crystal package of all compounds stacking interactions of two types were determined: pi(arene)-pi(arene) and pi(COO)-pi(arene) stacking. Finally, cytotoxicity of the compounds was tested on Hep2 and HepG2 cell lines. In the set of similar compounds mer-[RuNO(L)(2)Cl-3] (L = Py, gamma-Pic, beta-Pic, Inic-Alk, Nic-Alk), complexes with iso-nicotinic acid esters are the most toxic, while nicotinic acid derivatives are less toxic and compared with pyridine complex.
