Volatiles of four zaoyu (Chinese traditional fermented fish) products prepared from different species of marine fish were analyzed by headspace solid-phase micro-extraction (HS-SPME) and comprehensive two-dimensional gas chromatography in combination with time-of-flight mass spectrometry (GC x GC/TOFMS). First, a 50/30 mu m DVB/CAR/PDMS was used and the influence of several parameters on the efficiency of HS-SPME such as extraction temperature, time, salting-out effect, and stirring were optimized, odor activity values (OAVs) of volatile compounds were computed based on the threshold values of aroma constituents; the characteristic volatiles and their odor characteristics of the four zaoyu were investigated. The results demonstrated that the most effective extraction of the analytes was obtained with a 40 min extraction at 50 degrees C with the addition of 20% NaCl and stirring at 300 r/min. Under these conditions, a total of 288 volatile components were tentatively identified based on mass spectra and comparison of linear retention indices in the four zaoyu products. Authenticated compounds included aldehydes, esters, alcohols, ketones, furans, lactones, nitrogen compounds, sulfur compounds, terpenes, phenols, etc. Among the identified types of volatile compounds, the number of esters is the largest, whereas the content of aldehydes is the highest. The results of OAVs comparisons proved that both aldehydes and esters provided the most significant contribution to the aromas of zaoyu, and each zaoyu product had its own unique active flavor components. Moreover, the OAVs of active flavor compounds common to the four examined zaoyu varied significantly. Our results substantiated that GC x GC/TOFMS could provide a robust technical means to understand the flavor characteristics of zaoyu and allow us to better evaluate and improve the flavor quality of the products with complex food matrix like zaoyu. Practical applications The method present in this research is suitable to characterize the volatile constituents of aquatic products, and could also be used for component characterization of similar complex samples such as fermented fish and foods. Understanding the key aroma compounds of fermented fish and its formation mechanism could provide a guide of process optimization and flavor regulation, contributing to further studies related to volatile compounds in the field of food flavor analysis.

New five-membered oxazol-2(3H)-one heterocycles and 1,2-diaroylhydrazines are obtained in good yield when 1,2-dicarbonyl substrates are reduced at the cathode in N-methyl formamide/LiClO4 as solvent-supporting-electrolyte system, and in the presence of arenediazonium salts. Electrochemical pathways are presented to involve a) cascade reactions: hydrogen atom abstraction from a solvent molecule, radical coupling reaction with substrate intermediate, and intramolecular migration of a methylamino group, to provide oxazolones or b) surprising C-C bond cleavage in the substrate radical anion, assisted by a diazonium salt, that evolves to disubstituted arylhydrazides.

New Schiff bases [N’-(phenyl(pyridin-2-yl)methylene) isonicotinohydrazide ((LH)-H-1), N-1-(naphthalen-1-yl)-N-2-(phenyl(pyridin-2-yl) methylidene) ethane-1,2-diamine ((LH)-H-2), N-(6-chlorobenzo[d]thiazol-2-yl)-1-phenyl-1-(pyridin-2-yl) methanimine ((LH)-H-3))were synthesized by reaction of 2-benzoylpyridine with different amines (2-amino-6-chlorobenzothiazole, isonicotinohydrazide and N-1-(naphthalen-1-yl)ethane-1,2-diamine) and characterized by H-1-NMR, C-13-NMR, IR mass spectroscopy and elemental analysis. The compounds were assayed by the disc diffusion method for anti-bacterial against five pathogenic bacteria species (Staphylococcus aureus, Micrococcus luteus, Staphylococcus pyogenes, Bacillus sub tilis, and E. coli). All prepared Schiff bases showed good activity compared to positive control (streptomycin), Moreover the (LH)-H-3 showed the highest activity against S. aureus, and M. luteus than the other compounds and streptomycin. In additional molecular docking studies with 3-chymotrypsin-like protease (3CLpro), the essential enzyme for SARS-CoV-2 proliferation. The rest of compounds have shown promising results as 3CLpro inhibitors interacting with the active sites of the enzymes. Finally, DFT ‘s estimated electrostatic molecular potential results were used to illustrate the molecular docking findings. The DFT calculations showed that (LH)-H-3 has the highest dipole moment and electrophilicity index. Interestingly, (LH)-H-2 of the largest energy gap Delta E = 2.49 eV, there are several hydrophilic interactions that could facilitate the binding with the receptors. Aryl and heteroaryl chiral carbinols are useful precursors in the synthesis of drugs. Lactobacillus paracasei BD87E6, which is obtained from a cereal based fermented beverage, was investigated as whole cell biocatalyst for the bioreduction of different ketones (including aromatic, hetero-aromatic and fused bicyclic ketone) into chiral carbinols, which can be used as a pharmaceutical intermediate. The study shows that bioreduction of aryl, heteroaryl and fused bicyclic ketone (1-5) to their corresponding chiral carbinols (1a-5a) in excellent enantioselectivity (>99%) with high yields. This study gave the first example for an enantiopure production of (S)-6-chlorochroman-4-ol (3a), which has many antioxidant activity, by a biological method. For asymmetric bioreduction of other prochiral ketones, these results open way to use of L. paracasei BD87E6 as biocatalysts. Also, the present process shows a hopeful and alternative green synthesis for the production of enantiopure carbinols in a mild, inexpensive and environmentally friendly process.

We herein report the fabrication of a bifunctional iron nanocomposite catalyst, in which two catalytically active sites of Fe-N-x and Fe phosphate, as oxidation and Lewis acid sites, were simultaneously integrated into a hierarchical N,P-dual doped porous carbon. As a bifunctional catalyst, it exhibited high efficiency for direct oxidative cleavage of alkenes into ketones or their oxidation into 1,2-diketones with a broad substrate scope and high functional group tolerance using TBHP as the oxidant in water under mild reaction conditions. Furthermore, it could be easily recovered for successive recycling without appreciable loss of activity. Mechanistic studies disclose that the direct oxidation of alkenes proceeds via the formation of an epoxide as intermediate followed by either acid-catalyzed Meinwald rearrangement to give ketones with one carbon shorter or nucleophilic ring-opening to generate 1,2-diketones in a cascade manner. This study not only opens up a fancy pathway in the rational design of Fe-N-C catalysts but also offers a simple and efficient method for accessing industrially important ketones and 1,2-diketones from alkenes in a cost-effective and environmentally benign fashion.

A series of halogenated imidazo[1,5-alpha]pyridines was prepared and their structural and optical properties investigated. The products were characterized by spectroscopic techniques and their optical properties discussed in relation to their chemical structure. We were able to triplicate the luminescence quantum yields (phi) in solution for three different imidazo[1,5-alpha]pyridine derivatives, depending on the halogen nature of the substituent on the imidazo[1,5-alpha]pyridine moiety. The effect of the halogen and of the geometrical and chemical characteristics of the molecular skeleton on the crystal packing was studied in the solid state by single crystal X-ray diffraction. At the same time, the possible presence of halogen bonds was evaluated through solid-state NMR analysis.

The Rotimer, a rotifer-specific biopolymer, is an exogenic bioactive exudate secreted by different monogonant species (e.g. Euchlanis dilatata or Lecane bulla). The production of this viscoelastic biomolecule is induced by different micro-particles, thereby forming a special Rotimer-Inductor Conglomerate (RIC) in a web format. In this case, the water insoluble Carmine crystals, filtered to size (max. diameter was 50 mu m), functioned as an inductor. The RIC production is an adequate empirical indicator to follow up this filamentous biopolymer secretion experientially; moreover, this procedure is very sensitive to the environmental factors (temperature, pH, metals and possible natural pollutant agents). The above mentioned species show completely different reactions to these factors, except to the presence of calcium and to the modulating effects of different drugs. One of the novelties of this work is that the Rotimer secretion and consequently, the RIC-formation is a mutually obligatory and evolutionary calcium-dependent process in the concerned monogonants. This in vivo procedure needs calcium, both for the physiology of animals and for fiber formation, particularly in the latter case. The conglomerate covered area (%) and the detection of the longest filament (mm) of the given RIC were the generally and simultaneously applied methods in the current modulating experiments. Exploring the regulatory (e.g. calciumdependency) and stimulating (e.g. Lucidril effect) possibilities of biopolymer secretion are the basis for optimizing the RIC-production capacities of these micro-metazoans.

The X-ray structural analysis performed on two of Pd(ii) and three Pt(ii) complexes, namely [Pd(L-2)(CH3)Cl] (10), [Pd(L-3)(CH3)Cl] (11) and [Pt(L-1)Cl-2] (5), [Pt(L-4)Cl-2] (8), [Pt(L-2)(CH3)Cl] (14) confirmed the spectroscopic and analytical data. Finally DFT studies unveiled the structural reasons behind the inertia of the synthesised compounds toward metalation, identified as the higher angle steric strain in comparison with the analogous bipyridine complexes.
